Back when I was at school, we often made a similar snack cake from a mix. Spouse and I were discussing this just the other day.

She reminded that there was a disposable pan in the box as well. I had completely forgotten that.

The perfect recipe for ripe bananas.

If I recall correctly, they came in different flavors like spice cake and banana walnut. They were quite inexpensive and my Dad always seemed to pick them up when grocery shopping.

My Dad always did the grocery shopping and still does in his 81st year. I daresay, my Mom couldn’t find her way around a grocery store, even to this day.

Give ripe bananas a brand new life!

Dad was always a good shopper with a keen eye for a good sale. He would buy bunches of those little cake mixes, and we six kids often made them after school.

Childhood memories.

What I remember most is that they were so easy to make from the mix and that they were so moist and tender. I did my best to replicate that in this recipe.

We have a bit of an obsession around here with ripe bananas that need to be used up quickly. If you search for banana recipes here you will find no less than 67 of them on this website. This is number 68!

The “All in One” method

I decided to come up with a scratch version of this cake using what Mary Berry calls the “all in one method”. It truly is the easiest way to make a scratch cake ever, using the same method as the chocolate cake recipe we use for Black & White Cake.

An “all in one” cake is simply adding all of the ingredients to the bowl at one, mix quickly and bake. Nothing more to it than that.

I wanted to make it super easy, so that even a child could make it after school themselves. This one is made in a 9×9 pan but even if you have enough bananas on hand to make 1 cup of banana puree, you can easily make a smaller snack cake.

Just use half this recipe and bake it in a 9×5 loaf pan. You can even make the full recipe in 2 loaf pans and freeze one for later.

It turned out super moist and the honey and banana are terrific flavors together. I think it is one of the best banana recipes you will find here. Let me know how it comes out if you try it.

Honey Banana Snack Cake. The quickest and easiest snack cake ever. All ingredients go into one bowl, then it’s just mix and bake! Perfect for packed lunches and after school snacks.

Ingredients

  • 2 cups banana puree

  • 1/3 cup butter (soft and at room temperature)

  • 1 cup lightly packed brown sugar

  • 2 tsp vanilla extract

  • 1/3 cup honey

  • 1/4 cup vegetable oil

  • 2 eggs, large or extra large

  • 2 cups all purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350 degrees F.
  2. Lightly grease a 9×9 baking pan and line with parchment paper.
  3. Mash the bananas. I like to do this in my stand mixer as the first ingredient to add to the bowl. Just mix the ripe bananas at medium speed until they are a smooth puree.
  4. Add all of the remaining ingredients and mix for only a minute until the batter is smooth.
  5. Pour the batter into the prepared pan and bake for 40-45 minutes or until a wooden toothpick inserted in the center comes out clean.
  6. Allow to cool for at least half an hour before serving.

Notes
