Prepare the marinade.

The delicious taste of the beef and broccoli is in the marinade. Never knew it only consisted of a few ingredients.

In a mixing bowl, add soy sauce, sesame oil, corn starch and baking soda. Whisk it all together and set aside while you prepare the beef.

Marinade

For this recipe I used flank steak. First, slice long strips against the grain. Next cut the strips into smaller pieces along the grain. Mix them in the marinade and let the meat soak in all those wonderful Asian flavors.

How to make beef and broccoli.

I cooked my beef and broccoli dish on the griddle, but this can also be done in a wok or regular frying pan.

First prepare the rice and broccoli. For the broccoli, I went the convenient route and bought the veggie precut and frozen. All it takes is 6 minutes in the microwave and voila! You can also buy fresh broccoli, boil in water or steam.

To make the perfect rice, start with rinsing the rice. This step will help remove excess starch, resulting in grains that separate better when cooked.

Next, in a sauce pan, pour 1 cup of dry rice, 2 cups of water and a little salt. Let if cook until the water starts to boil.

Turn down to simmer, cover with a lid and let it cook until all the water has evaporated into the rice. Do not remove lid to peak or stir. Once the liquid is gone, let it rest for a few minutes and fluff with a fork.

Before getting the griddle going, make the beef sauce. In a mixing bowl, add beef broth, oyster sauce and corn starch. Mix it all together and set aside.

Seared flank steak

Beef and broccoli on griddle

Set the griddle to 400 degrees. Add some minced garlic to the flat top and drop in the marinated flank steak. Flip the meat continuously as it cooks. Once you have a sear on both sides of the steak, add in the broccoli and continue flipping.

Finally, add in the beef sauce, continue flipping until the sauce thickens and covers the beef and broccoli cuts.

Serve over a dome of white rice and enjoy!
